Story Title: Sophie Langer’s Lemon Tart

Base Ingredients
75g butter (melted)
1 packet milk arrowroots
3 tablespoons caster sugar

Filling Ingredients
3 egg yolks
1 tin condesnsed milk
½ cup caster sugar
½ cup lemon/lime juice (4-5)
Zest of 2 lemons/limes

Recipe

  • Heat oven to 180c
  • Crush biscuits in a food processor until they remember breadcrumbs with a few chunks
  • Place in a bowl, add melted butter and sugar, then mix until it resembles wet sand.
  • Place in a buttered pie dish, then place in the oven until golden (usually around 8 minutes)
  • To make the filling, mix everything in a bowl then add straight to the golden base.
  • Place in the oven for about 40-50 minutes, or until the tart looks firm.
  • Place it straight into the fridge – leave it for at least an hour.
