Beef Kebabs – Theo’s Family favourite

Ingredients

  • 500 grams of Beef mince
  • ½ a red Capsicum diced small
  • 1 red onion chopped fine
  • 1 red onion sliced thin
  • 1 teaspoon of dried Cumin
  • 1 teaspoon dried sweet Paprika
  • 1 heaped handful dried breadcrumbs
  • 1 medium potato boiled soft & then grated
  • A handful of flat leaf parsley leaves, diced finely.
  • 1 large Egg
  • Salt and pepper to season
  • 4 Pita Bread
  • 4 whole tomatoes
  • 8 wooden or metal skewers.

Method

  • In a large bowl add the mince, capsicum, onion, cumin, paprika, breadcrumbs, potato, cracked egg, a big pinch of salt and a pinch of parsley.
  • Get your hands in there and mix it and squeeze it until it has all mixed together evenly.
  • Divide the mixture into 8 pieces.
  • Put one piece on your hand and place the skewer on top, then using the palm of your hand shape it long and round like a sausage with the skewer being in the middle- this can be done a day or an hour in advance. If it stays in the fridge for a little while, it will firm up and stick to the skewer.
  • Get your BBQ hot using a medium flame. On the grill start cooking your skewers.
  • Cut the tomato’s in half and place direct on the grill flat side down first.
  • Start turning the skewers, they should cook low and slow. Keep turning them to get a nice grill on the outside and until they are perfect on the inside – About 7-10 minutes.
  • Turn the tomato’s as well and try and get a nice grill all over. By turning the tomatoes, the outer flesh will cook well, have a grilled flavour and the inside will be cooked but firm.
  • Using the flat plate of your BBQ, brush or spray some water on it and place your Pita bread on it – Brush and spray the top of your bread also.
  • When the bottom of the bread has started to get hot and go brown flip over and repeat. By using the water, it steams the Pita so it is soft and pliable and not brittle.

To serve, place your Pita Bread on the plate and then your skewers on top. On the side place the thinly sliced red onions, tomatoes and a generous dollop of Greek Yoghurt. Sprinkle some Paprika over the yoghurt and tomatoes to season.

You can eat the dish with a knife and fork or you can make individual kebabs, most importantly ENJOY YOURSELF!
