Foraging in the Mourne Mountains

Story Title: Foraging in the Mourne Mountains
TX Date: 14th October 2018
Presenter: Trevor Cochrane

Located just by the town of Newcastle, sit the Mourne Mountains, and they offer some incredible scenery, as well as some exciting food foraging opportunities.

  • The enchanting seaside town of Newcastle has its fair share of myths and history to be explored. It also hosts a beautiful local hotel resort, Slieve Donard, which is the base to play golf on the Royal County Down Golf Course, it is considered to be the 4th best in the world.
  • Voted Ireland’s best chef in 2018, Paul Cunningham has a huge passion for the region. Having grown up in the area, he knows it better than most, and is able to use his knowledge of the local wild foods to great effect at his restaurant, Brunels.
  • The forest is absolutely full of things you can eat, such as wild garlic. While wild garlic has a root like your more traditional garlic, the seeds from the plant make a delicious spice.
  • With the foraged goods Paul heads back to his restaurant to cook up his in-season dish Cannon of Lamb cooked in whey.
  • Foraging for fresh produce has become a huge trend worldwide. It’s a great way to check what is in season, and it’s well known that wild foods bring more intense nutrition than your traditionally farmed foods.
