Title: Forage
Broadcast: Oct 21st 2018
Presenter: Trevor Cochrane

One restaurant really making waves in the Vancouver food scene is Forage. An award winning restaurant located downtown, this restaurant is focused on the getting the freshest produce with the realization that where the food comes is the biggest factor impacting the quality and goodness of the food you eat.

  • The dishes featured on the menu are all sourced from local organic farmers, fishers and producers – and as the name suggests foragers. Like many chefs he personally hand picks the finest produce for his kitchen from many sources including his local market, of which he is definitely spoiled as few people have a market available to them quite like Granville Island Market.
  • While running the kitchens at Forage and Timber, Chef Welbert Choi has developed his experience in this industry. He chooses his ingredients with respect, and considers the environmental impact of what he brings onto the menu.
  • Granville Island is a popular destination for both the locals and tourists alike – covering some 35 acres there’s the Granville Island Public Market as well as theatres, artisan workshops and craft studios. This indoor market has endless rows of stalls featuring fresh produce, gourmet foods, baked goods and seafood. It’s a food lover’s paradise.
  • Forage connects diners to local fishers, foragers and farmers. Also featured? The handiwork of an eclectic crew of talented BC distillers, winemakers, and brewers. The menu is – first and foremost – delicious, but also reflective of our Chef’s uncompromising commitment to local ingredients and building community through shared plates. Forage is open for breakfast 7 days a week, brunch on weekends and nightly for drinks and dinner.
