Jerusalem Artichoke Pizza

Story Title: Jerusalem Artichoke Pizza

Pizza Dough Ingredients
240gm Sourdough starter
½ cup warm water
2 ½ Cup Plain Flour
1 tspn Salt
¼ cup Olive Oil

Toppings
4 Jerusalem artichokes
1 tub Crème Fraiche
1 each Buffalo mozzarella
1 bunch fresh thyme

Recipe
- Light the pizza oven at least 2 hours before to ensure all of the stones are hot. (If using an oven and pizza stone, preheat to full 30 minutes before with the stone in the oven
- Put water and oil in the mixer with the dough hook attachment
- Add the starter, then the flour and finally the salt
- Need for 10 minutes
- Remove from the bowl and place into a greased mixing bowl and allow to stand covered with clingfilm for 1 hour or until doubled in size
- When proved, knock back the dough and portion into 4 even sized balls place on a tray, cover and allow to stand for 20 minutes to rest
- Whilst the dough is resting prepare the toppings
- Slice the artichokes very thinly, tear up the mozzarella and pick the time
- Roll dough out into a round
- Spread with crème fraiche then add the torn mozzarella
- Add the picked thyme and layer the artichokes nicely on top
- Cook until crisp on the bottom
