Carrot Salad

Story Title: Carrot Salad

3 carrots
1 red chilli (seeds removed)
2 tbspn chopped coriander
Handful of black olives (pitted)
2 tbspn extra virgin olive oil
1 tbspn lemon juice
1 tbspn honey
1 tspn ground cumin
½ pomegranate
Sea salt
Ground pepper


  • Grate your carrot, then put the carrot, coriander and olives into a serving bowl.
  • Season with salt and pepper then toss together.
  • Add salad dressing, de-seed and finely chop red chilli. Sprinkle on top.
  • Slice pomegranate and bang on the back to remove seeds. Add on top of the salad.
