Lemon Myrtle Leaves


  • To prep, make sure to clean your mussels to drain the salt water.
  • Heat up your wok, adding a little olive oil.
  • Add the crushed lemon myrtle leaves to release the citrus.
  • Add your mussels to the wok – they don’t take too long to cook, so add the sparkling apple juice as soon as they’re in. Add around 700ml.
  • Cook for 3-5 minutes, then pour into a bowl.
