  • 350 - 400g water
  • 2tsp dried instant yeast or 20g fresh yeast
  • 1tbsp extra virgin olive oil
  • 500g baker's flour
  • 1tsp sea salt + extra for sprinkling on top
  • 2 sprigs of fresh thyme, leaves only, to sprinkle on top


  • Medium mixing bowl
  • Small jug
  • Whisk
  • Cling wrap
  • Baking Tray


  • Sift bakers flour into mixing bowl
  • Create small ‘well’ in the flour for mixing other ingredients in and add salt
  • Pour water into small jug
  • Pour yeast onto water and mix well
  • Once mixed, add olive oil to water mixture and stir
  • Pour water mixture over flour and mix well with hands
  • Toss some flour on the counter top and create a ball of dough with your hands
  • Wrap the dough and rest for an hour at room temperature
  • Place dough on baking tray and press out evenly to the corners
  • Make small thumbprints sporadically in the dough
  • Sprinkle with salt & rosemary
  • Bake for 1 hr.
