INGREDIENTS
- Vegetable Oil
- 2 large eggs (I prefer free range)
- 100g plain flour
- 100 ml milk
METHOD
- Preheat oven to 225 C
- Add splash of vegetable oil to each of the compartments of a muffin tin
- Put tin into oven for 10-15 mins - til the oil is very hot
- While the oil is heating - beat eggs, flour and milk and a pinch of salt until light and smooth
- Remove the tin from the oven (carefully, the oil will be very hot)
- pour the batter evenly into the muffin tin compartments
- return to the over for 10-15 minutes and batter is risen and golden
Serve with vegetarian sausages, mashed potatoes, gravy, peas and Enjoy!
