Frittata recipe

Ingredients:

  • Olive oil
  • 150g asparagus
  • 100g frozen peas
  • 4 spring onions
  • Mint
  • 6 large eggs
  • 65g feta
  • Muffin tin for 6
  • Baking paper
  • These will be done in the oven

Method:
Lets start with some mint first, pick some leaves then chop them up…
Get a few stems of spring onions…
Then move onto chopping up the asparagus.
Blanch the asparagus and peas on the cooktop in some boiling water and very quickly take it out again.
Cut some baking paper and lay into muffin tin… spoon the veges into the mould and fill with some eggs that have been beaten…
Put it into the oven for 20 mins to cook.
