  • Pestle and mortar.
  • Cooking pan.
  • Gas burner.
  • Wooden spoon.
  • Rice cooker.
  • Bowl or plate to serve.
  • Fork/spoon Small bowls/ramekins for spices.


  • White jasmine rice.
  • Mount Barker Chicken Maryland.
  • Raw sugar.
  • Organic coconut oil.
  • Crushed lemongrass.
  • Gluten-free light soy sauce.
  • Salt Chilli powder.
  • Turmeric powder.
  • Garlic powder.
  • Cumin powder.
  • Fennel seed.
  • Cumin seed.
  • Fennel powder.
  • 1 whole coral lettuce (for plating).
  • Coriander (for garnish).


  1. Lemongrass Chicken & Rice.
  2. Mix all the dry ingredients together except the coconut oil.
  3. Marinate the chicken 3cm cut with the dry marination
  4. add the coconut oil and soy sauce rub through.
  5. Let it rest in cold room overnight.
  6. Heat up the cooking pan with coconut oil add in the marinated chicken evenly stir fry approximately for 10min.
  7. Serve with rice.
