Equipment:
- Pestle and mortar.
- Cooking pan.
- Gas burner.
- Wooden spoon.
- Rice cooker.
- Bowl or plate to serve.
- Fork/spoon Small bowls/ramekins for spices.
Ingredients:
- White jasmine rice.
- Mount Barker Chicken Maryland.
- Raw sugar.
- Organic coconut oil.
- Crushed lemongrass.
- Gluten-free light soy sauce.
- Salt Chilli powder.
- Turmeric powder.
- Garlic powder.
- Cumin powder.
- Fennel seed.
- Cumin seed.
- Fennel powder.
- 1 whole coral lettuce (for plating).
- Coriander (for garnish).
Recipe:
- Lemongrass Chicken & Rice.
- Mix all the dry ingredients together except the coconut oil.
- Marinate the chicken 3cm cut with the dry marination
- add the coconut oil and soy sauce rub through.
- Let it rest in cold room overnight.
- Heat up the cooking pan with coconut oil add in the marinated chicken evenly stir fry approximately for 10min.
- Serve with rice.
