Pancakes with Strawberry & Balsamic Jam

Ingredients – Strawberry and balsamic jam.
- 500gm of Strawberries – diced into small pieces
- 1 tablespoon honey
- 1 teaspoon vanilla paste
- 1 cinnamon quill
- 1 star anise
- 1 tablespoon balsamic vinegar
Ingredients - Pancakes
- 1 egg
- 1 cup self-raising flour
- 1 teaspoon honey
- 1 tablespoon melted butter
- 200mls milk
- Thickened cream
- Icing sugar
- Pinch of salt
- Pinch of baking powder
- 6 strawberries cut in half (12 pieces)
Method
- Start on the Jam first.
- Place the diced strawberries in a large pot, add the honey, vanilla, cinnamon and star anise.
- Over a medium-high heat, bring the contents of the pot to the boil.
- One the mixture is boiling, reduce the heat to medium-medium low.
- Simmer for 10 minutes stirring time to time, reduce the heat to low and add the balsamic vinegar.
- Stir and simmer for a further 5 minutes and remove from the heat.
- Transfer the contents to a bowl or jug and bring to room temperature.
- To make the pancakes, whisk an egg in a large bowl then top with the milk and melted butter.
- Using a fork whisk the ingredients together, cover with cling film and let it sit for 5 minutes before using the mixture.
- Use a thick based pan on a medium heat, melt 1 teaspoon of butter and place 2 teaspoons of mixture per pancake and top with 2 strawberry pieces.
- When the pancakes start to bubble (roughly 3-5 minutes) flip the pancakes and cook for a further 2 minutes.
- Remove from the pan, stack pancakes around a plate and top with the jam.
- Serve with a dust of icing sugar and a dollop of thickened cream.
