Story Title: Crumbed Chicken

Ingredients
1 medium egg
50 g Parmesan finely grated
25 g quick cook polenta
Paprika (not smoked)
½ tsp dried thyme
½ tsp paprika (not smoked)
2 boneless skinless chicken breast fillets (around 400 g)
Lemon wedges to serve

Recipe

  • Mix the polenta with the parmesan cheese. Add in your paprika and thyme – mix together.
  • Cut your chicken breasts into strips. Make sure it’s not too thick.
  • Dunk your chicken into egg yolk and roll it in the polenta mixture.
  • Pop it into the oven for 15 minutes or until cooked through.
  • Squeeze some lemon over the chicken.
