Ingredients
- 1kg squid
- 1 whole onion
- 2 cloves garlic
- 1 punnet cherry tomatoes (cut into wedges)
- Fresh parsley
- Fresh Basil
- Olive oil
- Salt
- 1kg box of penne
EQUIPMENT
- 1 x mixing bowl
- Wooden spoon
- Ladle
- Large frying pan
- Large pot
- Measuring cups
- Knife
- Chopping board
METHOD
- Carve squid into strips
- Cook the penne in salted boiling water until al dente
- Fry squid in dry pan on high heat until you hear a ‘sizzling’
- Remove squid from the pan and place to one side
- Add onion and garlic to the pan and cook until onion is transluscent
- Reduce to low heat and add tomatoes – cook for 10 minutes
- Add squid back to pan with tomatoes
- Pour cooked penne over the squid with a ladle of salted water
- Mix together thoroughly
- Sprinkle with fresh parsley & basil
